Green Beans With Roasted Red Pepper And Lemon Recipe - Cooking Index
6 cups | 960g / 33oz | Trimmed green beans |
1 cup | 146g / 5.1oz | Diced roasted red pepper from a jar |
2 tablespoons | 30ml | Fresh lemon juice |
1 teaspoon | 5ml | Grated lemon zest |
2 teaspoons | 10ml | Olive oil |
Salt - to taste | ||
Freshly-ground black pepper - to taste |
Fill a large stockpot with 3 quarts of water. Bring to a boil.
Add the green beans and cook for 3 minutes. Drain. Splash the green beans with cold water.
In a large bowl, add the roasted red peppers, lemon juice, lemon zest, olive oil, salt, and pepper. Add the green beans. Toss well. Serve at room temperature.
