Black Bean Salad

Try this spicy salad with grilled chicken or pork.

Recipe Ingredients

3 cups 480g / 16ozCooked black beans
2   Tomatoes - chopped
2   Red peppers - finely chopped
1 cup 62g / 2.2ozYellow corn
3   Garlic cloves - minced
1   Jalapeño pepper - minced
1/4 cup 59mlFresh lime juice
2 tablespoons 30mlRed wine vinegar
1 tablespoon 15mlCumin
1 tablespoon 15mlOlive oil
2 tablespoons 30mlChopped fresh cilantro - (optional)

Recipe Instructions

Combine all ingredients and let the bowl sit in the refrigerator for several hours to blend the flavors. Serve.
