Black Bean Salad Recipe - Cooking Index
Try this spicy salad with grilled chicken or pork.
Courses: Salads3 cups | 480g / 16oz | Cooked black beans |
2 | Tomatoes - chopped | |
2 | Red peppers - finely chopped | |
1 cup | 62g / 2.2oz | Yellow corn |
3 | Garlic cloves - minced | |
1 | Jalapeño pepper - minced | |
1/4 cup | 59ml | Fresh lime juice |
2 tablespoons | 30ml | Red wine vinegar |
1 tablespoon | 15ml | Cumin |
1 tablespoon | 15ml | Olive oil |
2 tablespoons | 30ml | Chopped fresh cilantro - (optional) |
Combine all ingredients and let the bowl sit in the refrigerator for several hours to blend the flavors. Serve.
