Avocados With Cilantro Lime Salsa

Recipe Ingredients

2 tablespoons 30mlMinced red onion
2/3 cup 10g / 0.4ozMinced cilantro
1/4 cup 23g / 0.8ozMinced parsley
2 tablespoons 30mlOlive oil
3 tablespoons 45mlLime juice
1 1/2 tablespoons 22mlWhite wine vinegar
2   Garlic cloves - minced
1   Jalapeņo pepper - minced
1   Avocado - cut 18 thin slices (large)
1   Orange - sectioned (medium)
1   Red onion - sliced into rings (small)

Recipe Instructions

Combine the onion, cilantro, parsley, oil, lime juice, vinegar, garlic and jalapeño pepper in a small bowl. Cover and refrigerate for 1 hour.

On individual plates, fan out the avocado slices and top with oranges and red onions. Spoon salsa on top and serve.
