Applesauce Cinnamon Muffins Recipe - Cooking Index
1 1/4 cups | 50g / 1.8oz | Oat-bran cereal - uncooked |
1 cup | 62g / 2.2oz | Whole-wheat flour |
2 teaspoons | 10ml | Ground cinnamon |
1 teaspoon | 5ml | Baking powder |
1/4 teaspoon | 1.3ml | Baking soda |
1/2 teaspoon | 2.5ml | Salt |
3/4 cup | 177ml | Unsweetened applesauce |
1/2 cup | 118ml | Honey |
1/4 cup | 59ml | Vegetable oil |
1 teaspoon | 5ml | Pure vanilla extract |
1/4 cup | 36g / 1.3oz | Chopped walnuts |
Preheat oven to 375 degrees. Coat 12 medium-size cups with vegetable oil or line with paper baking cups. In a medium bowl combine Oat Bran cereal, cinnamon, baking powder, soda, and salt.
In a large bowl combine applesauce, honey, oil, egg, and vanilla. Stir in dry ingredients; mix well. Stir in nuts. Fill prepared muffin cups almost full. Bake 15 to 20 minutes or until golden brown. Serve warm.
