Apple Coleslaw Recipe - Cooking Index
1 cup | 237ml | Shredded red cabbage |
1 cup | 237ml | Shredded green cabbage |
1/2 cup | 55g / 1.9oz | Shredded carrots |
1/4 cup | 36g / 1.3oz | Diced Granny Smith apples |
2 tablespoons | 30ml | Raisins |
2 tablespoons | 30ml | Apple cider vinegar |
3 tablespoons | 45ml | Unsweetened apple juice concentrate |
1/2 cup | 118ml | Low-fat mayonnaise |
Salt - to taste | ||
Freshly-ground black pepper - to taste |
In a large salad bowl, combine the first five ingredients.
Whisk together in a small bowl the remaining ingredients. Pour the dressing over the slaw and toss well. Cover and refrigerate for 30 minutes before serving.
