Recipe Ingredients

1 tablespoon 15mlOlive or vegetable oil
1 cup 146g / 5.1ozChopped red or green bell pepper,
  Or a combination
1 cup 146g / 5.1ozChopped zucchini or yellow squash, or both
2 1/4 cups 533mlBloody Mary mix or vegetable juice
1 cup 237mlBulgur wheat
1 tablespoon 15mlLemon juice
1 teaspoon 5mlDried basil - crushed
  [or 1 tbspn minced fresh basil]
1/3 cup 20g / 0.7ozChopped green onions

Recipe Instructions

Toss all the ingredients except the basil and green onions together in the crockpot and cook on LOW for 8 hours, adding the basil after 7 1/2 hours, and garnishing with green onions just before serving.
