Potato Spinach Soup Recipe - Cooking Index
4 | Potatoes - diced (medium) | |
1 | Onion - chopped | |
1 cup | 146g / 5.1oz | Chopped smoked turkey breast or ham |
4 cups | 948ml | Chicken broth |
1 teaspoon | 5ml | Dry mustard |
1/2 teaspoon | 2.5ml | Salt |
Freshly-ground black pepper - to taste | ||
1 | Frozen spinach - (10 oz) - thawed, sqeezed dry | |
1 cup | 146g / 5.1oz | Shredded Swiss cheese - (optional) |
Combine first 7 ingredients in crock pot. Cover and cook on LOW 7 to 8 hours, or until potatoes are tender.
Add spinach and continue cooking on HIGH for 15 to 20 minutes. Serve with shredded cheese sprinkled on top, if desired.
This recipe yields 6 servings.
