Healthy Chicken Chowder Recipe - Cooking Index
1/2 cup | 55g / 1.9oz | Shredded carrot |
1 cup | 237ml | Skim milk |
1/2 cup | 118ml | Chicken broth |
1/4 teaspoon | 1.3ml | Freshly-ground black pepper |
1/4 teaspoon | 1.3ml | Onion powder |
1 | Potato - peeled, and cut | |
Into 1/2" chunks | ||
4 | Green onions - chopped | |
1/2 lb | 227g / 8oz | Boneless skinless chicken breasts - cut 1" cubes |
2 | Cream-style corn - (15 oz ea) | |
1/4 cup | 59ml | Mashed potato flakes |
1/2 cup | 73g / 2.6oz | Shredded Cheddar cheese |
Mix all ingredients except cheese and potato flakes in slow cooker. Cover and cook on LOW heat for 5 to 6 hours or until potatoes are tender and chicken is no longer pink.
Stir in potato flakes and cook on HIGH, uncovered for 5 minutes until chowder has thickened and flakes have dissolved. Top with cheese before serving.
