Healthy Chicken Chowder

Recipe Ingredients

1/2 cup 55g / 1.9ozShredded carrot
1 cup 237mlSkim milk
1/2 cup 118mlChicken broth
1/4 teaspoon 1.3mlFreshly-ground black pepper
1/4 teaspoon 1.3mlOnion powder
1   Potato - peeled, and cut
  Into 1/2" chunks
4   Green onions - chopped
1/2 lb 227g / 8ozBoneless skinless chicken breasts - cut 1" cubes
2   Cream-style corn - (15 oz ea)
1/4 cup 59mlMashed potato flakes
1/2 cup 73g / 2.6ozShredded Cheddar cheese

Recipe Instructions

Mix all ingredients except cheese and potato flakes in slow cooker. Cover and cook on LOW heat for 5 to 6 hours or until potatoes are tender and chicken is no longer pink.

Stir in potato flakes and cook on HIGH, uncovered for 5 minutes until chowder has thickened and flakes have dissolved. Top with cheese before serving.
