Dijon Pasta Salad Recipe - Cooking Index
1 lb | 454g / 16oz | Rotini - tricolor |
2/3 cup | 157ml | Oil |
2 tablespoons | 30ml | Cider vinegar |
2 teaspoons | 10ml | Mustard - Dijon |
2/3 cup | 157ml | Mayonnaise |
2 cups | 220g / 7.8oz | Celery stalk - chopped (large) |
6 | Bacon - thick, cooked/chopped | |
2 | Egg - hard-cooked and | |
Choppe | ||
2 | Scallion - chopped | |
1/2 teaspoon | 2.5ml | Salt |
Paprika - (opt) |
Cook pasta in boiling water just until done, usually 11 to 13 minutes. Drain and refresh under cold running water.
In a large bowl, whisk together oil, vinegar, mustard and mayonnaise. Add pasta and all other ingredients to dressing, mix carefullly, and taste for seasoning. Chill thoroughly before serving.
