3/4 cup 82g / 2.9ozChopped celery
1/3 cup 36g / 1.3ozDiced carrots
1 1/2 tablespoons 22mlMinced garlic
3   Cherry tomatoes - smoked
1 1/3 cups 315mlCooking sherry
3/4 cup 177mlOlive oil
2 tablespoons 30mlSalt
1 teaspoon 5mlFreshly-ground white pepper
1/2 teaspoon 2.5mlCrushed red pepper
1 tablespoon 15mlRoasted garlic pepper - plus
1 teaspoon 5mlRoasted garlic pepper
1 teaspoon 5mlWhite sugar
2 1/2 tablespoons 37mlTomato paste
1 tablespoon 15mlFresh thyme leaves - plus
1 teaspoon 5mlFresh thyme leaves
4 tablespoons 60mlShiraz red wine

Recipe Instructions

Smoke tomatoes over hickory wood/chips for 1 hour to obtain smoky flavor.

Take onions, carrots, celery and garlic and sweat in a stockpot over medium heat until tender. Add remaining ingredients except for the red wine. Puree and bring to a boil. Reduce to a simmer for about 15 minutes. Remove from heat and whisk in the red wine. Hold for serving or refrigerate.
