Curried Broccoli And Rotini Recipe - Cooking Index
1 1/3 cups | 315ml | Rotini or gemelli pasta |
1 tablespoon | 15ml | Olive oil |
1 teaspoon | 5ml | Curry powder |
3 cups | 438g / 15oz | Broccoli flowerets |
1/2 cup | 73g / 2.6oz | Bell pepper - chopped |
1/2 cup | 118ml | Fat-free plain yogurt |
1/3 cup | 78ml | Chicken broth |
4 teaspoons | 20ml | Unbleached flour |
1 teaspoon | 5ml | Mustard - prepared |
Cook pasta according to package directions. Meanwhile, in a skillet heat oil. Add curry powder and stir fry over medium high heat for 1 minute. Add broccoli and peppers; stir fry for 3 to 4 minutes or until crisp-tender. For sauce in a saucepan, stir together yogurt, chicken broth, flour, mustard, and salt. Stir into broccoli mixture. Cook and stir until thickened and bubbly. Cook and stir for 1 minute more. Add pasta to broccoli mixture; toss to mix. Heat through.
