Bernie's Grill's Marinated Vegetables Recipe - Cooking Index
Fresh vegetables, such as cauliflower | ||
Broccoli, asparagus, carrots, onions - (whatever you like) | ||
1 | Water - seasoned with | |
2 tablespoons | 30ml | Salt |
Ice - as needed | ||
Marinade | ||
2 cups | 474ml | Olive oil |
1 cup | 237ml | Apple cider vinegar |
2 tablespoons | 30ml | Coarse-ground mustard |
1 teaspoon | 5ml | Granulated garlic |
1 teaspoon | 5ml | Freshly-cracked black pepper |
To make marinade, whisk together oil, vinegar, mustard, garlic and pepper.
Bring salted water to boil, add veggies, cover and cook, 2 to 4 minutes, drain off water, cover with ice, and "shock" the veggies back to being cold.
Drain veggies, add to marinade, toss in marinade and cover, and refrigerate for up to 7 days.
