La Madeleine's Seven Grain Stuffing Recipe - Cooking Index
1/4 lb | 113g / 4oz | Unsalted butter - (1 stick) |
1 lb | 454g / 16oz | Onion - diced (medium) |
2 | Garlic cloves - minced | |
1/4 cup | 36g / 1.3oz | Red apples - diced |
1/8 cup | 13g / 0.5oz | Celery - diced |
1/2 lb | 227g / 8oz | Button mushrooms - sliced thin |
1/4 lb | 113g / 4oz | Raw bacon - diced |
1 lb | 454g / 16oz | Day-old seven-grain bread - diced |
3 cups | 711ml | Chicken broth |
2 tablespoons | 30ml | Minced oregano |
Sea salt - to taste | ||
Freshly-ground black pepper - to taste |
Place all but 1 teaspoon butter into a skillet. Add the onions, garlic, apples, and celery. Cook over medium heat, stirring while the onions turn translucent, about 5 minutes. Add the mushrooms and bacon and simmer until the mushrooms have released some of their liquid and the bacon is cooked (3 to 4 minutes).
With the remaining tablespoon of butter, coat a medium-sized baking pan, and place the stuffing in it. Cover with aluminum foil and bake until the stuffing is soft (about 35 minutes).
Remove the foil and continue baking until the stuffing is crisp and golden on top (another 10 minutes). Remove from oven and serve.
This recipe yields 8 servings.
