Buca Di Beppo's Garlic Mashed Potatoes

Recipe Ingredients

1 1/2 lbs 681g / 24ozBaby red potatoes
1 tablespoon 15mlChopped fresh garlic - (to 2)
2/3 cup 97g / 3.4ozFreshly-grated Romano cheese
  = (Pecarino is better if you can find it)
1/4 lb 113g / 4ozButter (no substitutes)
1/2 teaspoon 2.5mlDried leaf oregano
1/2 teaspoon 2.5mlSalt
  Half-and-half or milk - added depending on
  The consistency of the potatoes

Recipe Instructions

Wash potatoes and remove bad spots (get rid of green spots!). Place potatoes in a 4 1/2-quart pan; cover with cold water and bring to a boil, till done. Drain and place immediately in 3 quart bowl.

Combine with all the remaining ingredients, except half-and-half and mix well using a wire whisk. Slowly add half-and-half until desired consistency is reached. Adjust flavors and seasoning and place in a 250 degree oven until ready to serve.
