1/4 | Onion - chopped (medium) | |
1/2 cup | 73g / 2.6oz | Freshly-groate Parmesan cheese |
1 1/2 teaspoons | 7.5ml | Coarsely-ground black pepper |
2 tablespoons | 30ml | Red wine vinegar |
1/2 cup | 118ml | Olive oil - plus |
2 tablespoons | 30ml | Olive oil |
Salt - to taste | ||
Freshly-ground black pepper - to taste |
* Note: The anchovies are packaged in small tins. Two ounces is about 12 fillets or 2 tablespoons.
Place all ingredients except oil in food processor. Process and add oil slowly while processor is running. Adjust salt and pepper if needed.
