Pappasito's Cantina's Frijoles A La Charra

This is a great change from your ordinary refried beans.

Recipe Ingredients

1 1/2 lbs 681g / 24ozPinto beans - uncooked
1   Cold water - for soaking beans
3/4 lb 340g / 11ozBacon slices - chopped 1" squares
1/2 cup 73g / 2.6ozFinely-chopped fresh garlic - plus
1 tablespoon 15mlFinely-chopped fresh garlic
4 tablespoons 60mlFinely-chopped cilantro - plus
1/8 cup 2g / 0.1ozFinely-chopped cilantro
1 cup 62g / 2.2ozChopped white onions
1 tablespoon 15mlCumin
1 tablespoon 15mlChili powder
1/2   Cold water - for cooking beans
1 1/2 tablespoons 22mlSalt
2 cups 125g / 4.4ozChopped Roma tomatoes

Recipe Instructions

Soak beans in 1 gallon cold water for 8 hours. Drain when ready to use.

In a 2-gallon heavy pot cook the bacon pieces until well done. Do not undercook the bacon. Add 1/2 cup chopped garlic, 3 tablespoon cilantro, and chopped onions to hot bacon. Cook until onions are transparent.

When onions are ready, add beans, cumin, and chili powder. Stir and add 1/2 gallon cold water. Turn heat to medium-low. Add salt and stir. Cook beans slowly until fork tender (approximately 1 hour). Stir constantly to avoid burning the bottom.

Add tomatoes, remaining garlic, and cilantro, and serve.
