This is a great change from your ordinary refried beans.

3/4 lb | 340g / 11oz | Bacon slices - chopped 1" squares |
1/2 cup | 73g / 2.6oz | Finely-chopped fresh garlic - plus |
1 tablespoon | 15ml | Finely-chopped fresh garlic |
4 tablespoons | 60ml | Finely-chopped cilantro - plus |
1/8 cup | 2g / 0.1oz | Finely-chopped cilantro |
1 cup | 62g / 2.2oz | Chopped white onions |
1 tablespoon | 15ml | Cumin |
1 tablespoon | 15ml | Chili powder |
1/2 | Cold water - for cooking beans | |
1 1/2 tablespoons | 22ml | Salt |
2 cups | 125g / 4.4oz | Chopped Roma tomatoes |
Soak beans in 1 gallon cold water for 8 hours. Drain when ready to use.
In a 2-gallon heavy pot cook the bacon pieces until well done. Do not undercook the bacon. Add 1/2 cup chopped garlic, 3 tablespoon cilantro, and chopped onions to hot bacon. Cook until onions are transparent.
When onions are ready, add beans, cumin, and chili powder. Stir and add 1/2 gallon cold water. Turn heat to medium-low. Add salt and stir. Cook beans slowly until fork tender (approximately 1 hour). Stir constantly to avoid burning the bottom.
Add tomatoes, remaining garlic, and cilantro, and serve.
