Olive Garden's Stuffed Mushrooms II

Recipe Ingredients

8 teaspoons 40mlMushrooms - cleaned, hollowed, (large)
  Stems and scrapings saved and chopped
1/4 cup 36g / 1.3ozGrated Parmesan cheese
2   Garlic cloves - minced
1/4 teaspoon 1.3mlFreshly-ground black black pepper
1 tablespoon 15mlOlive oil
1/2 cup 73g / 2.6ozItalian bread crumbs
1/4 cup 36g / 1.3ozChopped drained clams
  Olive oil - as needed

Recipe Instructions

Mix all ingredients (except mushrooms), including stem mix together. Fill inside of each cap with mixture. Arrange in pan and add 1/2-inch water to pan.

Drizzle each mushroom with a few drops of olive oil. Bake at 350 degrees for approximately 25 minutes. Serve hot. Reheats very well.

This recipe yields 4 servings.
