Luby's Cafeteria's Stuffed Jalapeņos Recipe - Cooking Index
Sometimes a restaurant offers something that is unique and tasty. These peppers are so good, you won't be able to stop eating them. We know that our test kitchen fell in love with these. You may have to double this one. They are so very much enjoyed you can't just eat one. These would be a nice party buffet fill in or a side dish for a office luncheon.

Length and seeds removed | ||
1 | Cream cheese - (8 oz) - softened | |
2 tablespoons | 30ml | Chives (dehydrated) |
1 tablespoon | 15ml | Minced pimiento peppers |
1/4 cup | 59ml | Mayonnaise |
When cream cheese reaches room temperature and is softened whip the cream cheese, add mayonnaise, chives, and pimientos. Blend together until smooth and fluffy. Fill jalapeños and enjoy. Cover and store jalapeños in refrigerator.
