Red Lobster's Pina Colada Dipping Sauce

Recipe Ingredients

1 cup 110g / 3.9ozPina colada mix
  = (Major Peters mix was used)
1/4 cup 59mlWater
2 tablespoons 30mlCrush pineapple - drained
1 tablespoon 15mlSweetened coconut flakes - plus
1 teaspoon 5mlSweetened coconut flakes
3 tablespoons 45mlPowder sugar - plus
1 teaspoon 5mlPowder sugar
1 tablespoon 15mlCorn starch - plus
1/2 teaspoon 2.5mlCorn starch
3 teaspoons 15mlCold water

Recipe Instructions

Mix Pina Colada mix, water, crushed pineapple, coconut, and powder sugar in a sauce pan. Heat on medium-low temperature until sauce begins to simmer, stirring frequently. Let mixture simmer slowly 10 to 12 minutes.

Mix corn starch and water together, add to sauce and blend well. Let mixture simmer for 3 to 5 minutes longer while stirring during and after adding cornstarch. Remove from heat and bring to room temperature.

Sauce is served at room temperature with "Parrot Bay Coconut Shrimp" (see recipe).
