1 | Freshly-ground white pepper | |
1 teaspoon | 5ml | Sesame oil |
3 | Ginger - smashed | |
3 | Green onion stalks - smashed | |
4 | Fish fillets - (serving size) | |
Garnish | ||
2 tablespoons | 30ml | Julienned green onions |
2 tablespoons | 30ml | Julienned peeled fresh ginger |
1 oz | 28g | Oil - heated |
2 oz | 56g | Sauce (see below) |
Cilantro sprigs - for garnish | ||
Sauce | ||
8 oz | 227g | Soy sauce |
10 oz | 284g | Chicken stock |
2 oz | 56g | Sugar |
Top fish with above ingredients before steaming. Cook fish 7 to 10 minutes, making sure fish doesn't overcook.
Garnish Instructions: Remove fish to serving plate. Cover with ginger and green onions. Spread the heated oil over the top to sizzle into the vegetables and fish. Distribute the sauce over the fish. Garnish with cilantro sprigs.
Sauce Instructions: Mix soy sauce, chicken stock and sugar.
