Olive Garden's Oven-Roasted Potatoes

Recipe Ingredients

2   Baking potatoes (medium)
1   Green pepper (medium)
1   Red pepper (medium)
4 tablespoons 60mlOlive oil
2 teaspoons 10mlChopped fresh rosemary
1 teaspoon 5mlMinced fresh garlic
1/2 teaspoon 2.5mlSalt
1/2 teaspoon 2.5mlFreshly-ground black pepper
4 teaspoons 20mlChopped fresh parsley
1/2 cup 73g / 2.6ozGrated Romano cheese

Recipe Instructions

Preheat oven to 350 degrees.

Peel potatoes and dice into 1/2-inch pieces. Core and seed peppers and dice into 1/2-inch pieces. Set aside.

Mix olive oil, rosemary, garlic, salt and pepper in a bowl. In a small baking pan, toss potatoes and peppers with the oil and herb mixture. Bake for 10 minutes or until potatoes are fork tender. Sprinkle potatoes with parsley and Romano.
