Red Lobster's Scallops Sauteed In Garlic And Tomatoes

Recipe Ingredients

1 lb 454g / 16ozScallops
  Flour - for dusting
4 tablespoons 60mlButter - (1/2 stick)
2   Garlic cloves - minced
1 cup 62g / 2.2ozDiced fresh tomatoes
1/4 cup 23g / 0.8ozMinced parsley
1 tablespoon 15mlLemon juice
  Salt - to taste
  Freshly-ground black pepper - to taste

Recipe Instructions

Cut scallops in half. Dry on paper towels, then dust lightly with flour.

Heat butter in a skillet, add garlic and mix. Add scallops and saute until they are lightly brown. Stir in tomatos, parsley and lemon juice. Season with salt and pepper.

This recipe yields 6 servings.
