Ripe Cucumber Pickles Recipe - Cooking Index
2 | Cut-up peeled seeded ripe cucumber | |
3 cups | 187g / 6.6oz | Chopped onion |
4 cups | 948ml | Vinegar |
1 1/2 cups | 297g / 10oz | Sugar |
1 teaspoon | 5ml | Curry powder |
1/2 teaspoon | 2.5ml | Freshly-ground black pepper |
1/2 teaspoon | 2.5ml | Turmeric |
Cayenne pepper - to taste | ||
1 tablespoon | 15ml | Dry mustard |
Arrange cucumbers in crocks in layers, sprinkling layers with salt. Let stand overnight, then drain thoroughly.
Add onion, vinegar and sugar. Mix spices and add. Simmer gently, stirring occasionally, until cucumbers and onions are soft. Seal in sterile jars.
