2 | Chopped green tomatoes | |
3 cups | 594g / 20oz | Sugar |
3 | Green peppers - diced | |
3 | Red peppers - diced | |
3 cups | 711ml | Vinegar |
5 cups | 312g / 11oz | Onions - finely chopped (large) |
3 tablespoons | 45ml | Salt |
1 tablespoon | 15ml | Celery seed |
1 tablespoon | 15ml | Allspice |
2 tablespoons | 30ml | Mustard seed |
1 tablespoon | 15ml | Tumeric |
Mix all vegetables in a large bowl. Salt and let stand 10 minutes. Drain.
In a large sauce pan, mix celery seed, mustard seed, tumeric, allspice, sugar and vinegar with vegetables. Bring to a boil. Reduce heat, bring to a boil a second time. Remove from heat. Fill hot sterile canning jars. Seal tightly.
