Julie's Corn Relish


Recipe Ingredients

1 tablespoon 15mlCornstarch
1 teaspoon 5mlTurmeric
1 cup 237mlCider vinegar
2   Green bell peppers - seeded, diced
2   Red bell peppers - seeded, diced
1   Cucumber - peeled, diced (large)
3 cups 187g / 6.6ozFresh corn kernels
4   Celery stalks - diced
1 1/4 cups 247g / 8.7ozSugar
1 teaspoon 5mlMustard seeds
1   Curry powder

Recipe Instructions

In a large pot, blend cornstarch and turmeric with 1 tablespoon of the vinegar. Add the rest of the vinegar, and mix in remaining ingredients. Bring to a boil, then lower heat, simmering slowly for one hour.

Pour into hot sterilized jars and seal with hot sterilized lids and rings -- following manufacturer's directions -- and seal.

This recipe yields 6 cups.
