Mrs. Blue's Shrimp Salad Recipe - Cooking Index
4 1/2 cups | 1066ml | Water |
1 1/2 lbs | 681g / 24oz | Unpeeled large fresh shrimp |
1/2 cup | 73g / 2.6oz | Chopped green pepper |
1/2 cup | 118ml | Sliced pimiento stuffed olives |
1/2 cup | 118ml | Commercial Italian salad dressing |
1/4 cup | 27g / 1oz | Chopped celery |
3 tablespoons | 45ml | Sweet pickle relish |
2 tablespoons | 30ml | Olive oil |
2 teaspoons | 10ml | Minced fresh parsley |
1 1/2 teaspoons | 7.5ml | Lemon juice |

Bring water to a boil; add shrimp, and cook 3 to 5 minutes or until shrimp turn pink. Drain well; rinse with cold water. Chill.
Peel and devein shrimp. Place shrimp in a large shallow dish. Combine green pepper and next 8 ingredients; pour over shrimp, stirring gently. Cover and marinate in refrigerator 2 to 3 hours, stirring occasionally.
Arrange leaf lettuce on individual serving plates; top with shredded iceberg lettuce. Spoon shrimp mixture evenly over shredded lettuce.
