Miniature Shrimp Quiches Recipe - Cooking Index
1 cup | 146g / 5.1oz | Shredded Swiss cheese - (4 oz) |
1/2 cup | 73g / 2.6oz | Finely-chopped cooked shrimp |
2 tablespoons | 30ml | Chopped fresh chives |
1/2 teaspoon | 2.5ml | Dried thyme |
Pastry Shells - (see below) | ||
2 | Eggs - beaten (large) | |
1/2 cup | 118ml | Half-and-half |
1/4 teaspoon | 1.3ml | Salt |
1/4 teaspoon | 1.3ml | Freshly-ground black pepper |
1/4 teaspoon | 1.3ml | Ground nutmeg |

Pastry Shells | ||
1/2 cup | 99g / 3.5oz | Butter or margarine - softened |
1/2 | Cream cheese - (8-oz pkg) - softened | |
1 1/2 cups | 93g / 3.3oz | All-purpose flour |
1/4 teaspoon | 1.3ml | Salt |
Combine first 4 ingredients; spoon evenly into Pastry Shells. Combine eggs and remaining ingredients, stirring well; pour mixture evenly into Pastry Shells. Bake at 350 degrees for 30 to 35 minutes or until set.
Pastry Shells: Beat butter and cream cheese at medium speed of an electric mixer until well blended; stir in flour and salt. Cover and chill 1 hour. Shape chilled dough into 1-inch balls. Place in ungreased miniature (1 3/4-inch) muffin pans, shaping each ball into a shell.
This recipe yields 3 dozen.
