1 3/4 lbs | 794g / 28oz | Unpeeled large fresh shrimp |
2 tablespoons | 30ml | Minced shallots |
1 tablespoon | 15ml | Minced garlic |
2 tablespoons | 30ml | Butter or margarine - melted |
1 tablespoon | 15ml | Olive oil |
2 tablespoons | 30ml | Lemon juice |
1 tablespoon | 15ml | Finely-chopped fresh dill - plus |
1 teaspoon | 5ml | Finely-chopped fresh dill |
1/8 teaspoon | 0.6ml | Salt |
1/8 teaspoon | 0.6ml | Freshly-ground black pepper |
Fresh dill sprigs - for garnish | ||
Lemon slices - for garnish |
Peel and devein shrimp. Cook shallot and garlic in butter and olive oil in a large skillet over medium heat, stirring constantly, until tender. Stir in shrimp; cook 3 minutes or until shrimp turn pink, stirring occasionally. Stir in lemon juice and next 3 ingredients. Serve warm or cold. Garnish, if desired.
