Cracklin' Cornbread Recipe - Cooking Index
2 cups | 125g / 4.4oz | Cornmeal |
2 teaspoons | 10ml | Baking powder |
1 teaspoon | 5ml | Baking soda |
3/4 teaspoon | 3.8ml | Salt |
2 | Eggs - beaten | |
2 cups | 474ml | Buttermilk |
2 tablespoons | 30ml | Vegetable oil |
1 cup | 237ml | Cracklings |
Combine cornmeal, baking powder, soda, and salt in a large bowl; add eggs, buttermilk, oil, and cracklings, stirring just until dry ingredients are moistened.
Place a well-greased 10-inch cast-iron skillet in a 450 degree oven for 4 minutes or until hot. Remove from oven; spoon batter into skillet. Bake at 450 degrees for 25 minutes or until lightly browned.
This recipe yields 8 servings.
