Orange Ricotta Pancakes Recipe - Cooking Index
| 2/3 cup | 97g / 3.4oz | Ricotta cheese |
| 2 | Egg yolks | |
| 6 tablespoons | 90ml | Flour |
| 1/4 cup | 59ml | Milk |
| 1 tablespoon | 15ml | Grated orange peel |
| 2 teaspoons | 10ml | Sugar |
| 1/4 teaspoon | 1.3ml | Baking powder |
| 1/8 teaspoon | 0.6ml | Salt |
| 2 | Egg whites | |
| 1 tablespoon | 15ml | Oil |
| Blueberry-Orange Sauce - (see recipe) |
In a blender or food processor, beat egg yolks and ricotta cheese until smooth. Add flour, milk, grated orange peel, sugar, baking powder, and salt. Beat until well blended.
In another bowl, beat egg whites until stiff, but not dry. Fold into the batter.
Heat oil in a skillet; drop batter by spoonfuls and cook the pancakes until golden brown; repeat as necessary. Serve with Blueberry-Orange Sauce.
This recipe yields 4 servings.
