Guatemala Banana Bread Recipe - Cooking Index
4 cups | 948ml | Mashed bananas |
1/2 cup | 118ml | Coconut milk |
1/2 cup | 99g / 3.5oz | Butter - melted |
3 cups | 187g / 6.6oz | Flour |
2 teaspoons | 10ml | Baking powder |
1/2 teaspoon | 2.5ml | Salt |
1/2 teaspoon | 2.5ml | Vanilla |
1/2 cup | 80g / 2.8oz | Raisins - (optional) |
1/2 cup | 73g / 2.6oz | Cashews - (optional), chopped |
In a large bowl, combine flour, baking powder and salt. Stir in bananas, coconut milk, vanilla and butter. Fold in raisins and cashews, if desired.
Pour into a greased 5- by 9-inch loaf pan. Bake at 350 degrees for 1 hour and 15 minutes or until tested done.
This recipe yields 1 loaf (16 slices).
