Cranberry Almond Bread Recipe - Cooking Index
2 cups | 125g / 4.4oz | Flour |
1/2 cup | 99g / 3.5oz | Sugar |
2 teaspoons | 10ml | Baking powder |
1 teaspoon | 5ml | Salt |
1 | Egg | |
1/2 cup | 118ml | Milk |
1/2 cup | 99g / 3.5oz | Butter - melted |
2 teaspoons | 10ml | Almond extract |
6 oz | 170g | Sweetened dried cranberries |
1 tablespoon | 15ml | Sugar |
1/4 cup | 23g / 0.8oz | Sliced almonds |
Preheat oven to 375 degrees. Grease an 8 1/2- by 4 1/2- by 2-inch loaf pan.
Combine flour, sugar, baking powder and salt in a medium mixing bowl. Set aside.
Combine egg, milk, butter, almond extract and sweetened dried cranberries in a medium mixing bowl. Add to dry ingredients; mixing just until the dry ingredients are moist.
Spread batter in loaf pan. Sprinkle with sugar and almonds. Bake for 1 hour or until a cake tester inserted into center of loaf comes out clean.
This recipe yields 1 loaf.
