Banana Poppy Seed Muffins Recipe - Cooking Index
2 cups | 474ml | Bananas - peeled (medium) |

3/4 cup | 148g / 5.2oz | Sugar |
1/4 cup | 59ml | Vegetable oil |
2 teaspoons | 10ml | Grated orange zest |
2 cups | 125g / 4.4oz | Flour |
1 1/2 tablespoons | 22ml | Poppy seeds |
2 teaspoons | 10ml | Baking powder |
1/2 teaspoon | 2.5ml | Salt |
Preheat oven to 375 degrees.
Puree bananas in blender to make 1 cup of pureed bananas.
In medium bowl, mix bananas, egg, sugar, oil and orange zest until well blended.
In large bowl, combine flour, poppy seeds, baking powder and salt. Stir banana mixture into flour mixture until evenly moistened.
Spoon batter into greased 2 1/2-inch muffin cups. Bake for 20 minutes or until cake tester comes out clean.
Remove from pan; cool on wire rack. Dip warm tops in sugar.
This recipe yields 12 muffins.
