Cheese And Raisin Latkes Recipe - Cooking Index
2 teaspoons | 10ml | Eggs - separated (large) |
1/4 cup | 59ml | Water |
2 tablespoons | 30ml | Sugar |
1 teaspoon | 5ml | Salt |
2 cups | 292g / 10oz | Small-curd cottage cheese |
3/4 cup | 46g / 1.6oz | All-purpose flour |
1/2 cup | 80g / 2.8oz | Raisins |
Vegetable oil - as needed |
Combine egg yolks, water, sugar, and salt in a medium bowl; beat with a wire whisk until blended. Stir in cottage cheese. Add flour and raisins; stir well.
Beat egg whites at high speed of an electric mixer until stiff peaks form. Gently fold into cheese mixture.
Pour oil to depth of 1/8-inch into a large heavy skillet. For each latke, drop 1/4 cup mixture into hot oil. Fry until golden, turning once. Drain. Serve warm.
This recipe yields 14 latkes.
