Blueberry Cornmeal Pancakes With Orange Butter Recipe - Cooking Index

1 cup | 62g / 2.2oz | Cornmeal |
1/4 cup | 49g / 1.7oz | Sugar |
2 teaspoons | 10ml | Baking powder |
1 teaspoon | 5ml | Baking soda |
1 teaspoon | 5ml | Salt |
1/4 teaspoon | 1.3ml | Ground cinnamon |
2 | Eggs | |
3 cups | 711ml | Buttermilk |
1/3 cup | 65g / 2.3oz | Butter - melted |
2 cups | 474ml | Fresh blueberries |

Orange Butter - (see recipe) |
In a large bowl combine flour, cornmeal, sugar, baking powder, baking soda, salt, and cinnamon.
In a medium bowl, beat eggs; add buttermilk and 1/3 cup melted butter. Add the egg mixture to the flour mixture and stir just until moistened; fold in blueberries.
Spoon 1/4 cup of the batter onto a greased griddle. Cook until both sides are light brown on the inside and crisp on the outer edges. Repeat with remaining butter. Serve with Orange Butter.
