Black Walnut Banana Pancakes Recipe - Cooking Index
To toast walnuts, place on baking sheet and bake at 350 degrees until lightly browned and aromatic, about 5 minutes.

1/4 cup | 49g / 1.7oz | Butter - melted |
1/2 cup | 73g / 2.6oz | Chopped black walnuts - toasted |
2 cups | 474ml | Bananas - sliced 1/2" thick (medium) |
Vegetable oil - as needed | ||
Maple syrup - for accompaniment |
Stir together flour, baking powder, sugar and salt in mixing bowl.
Beat the eggs in separate bowl; stir in milk and butter.
Add the liquid mixture to dry ingredients, stirring just until blended. Fold in the walnuts and bananas.
Heat greased griddle or skillet over medium heat or to 375 degrees. Griddle is ready when a few drops of water bubble and skitter rapidly around.
For each pancake, pour scant 1/4 cup batter onto hot griddle. Cook pancakes until puffed, bubbly and dry around edges. Turn and cook other sides until golden brown. Serve with maple syrup.
This recipe yields about 10 (4-inch) pancakes.
