Apple Dollar Pancakes Recipe - Cooking Index
A bit of sour cream in the batter makes these pancakes a bit less sweet than most, which might make them a hit at your house. Try them with powdered sugar, sliced bananas or your favorite jam in place of the maple syrup.

1 | Apple - peeled, cored, and chopped | |
3 tablespoons | 45ml | Flour |
1 teaspoon | 5ml | Baking powder |
1/2 teaspoon | 2.5ml | Ground cinnamon |
3/4 cup | 246g / 8.7oz | Maple syrup |
Combine egg yolks, sour cream, apple, flour, baking powder and cinnamon; stir well.
Beat egg whites with an electric mixer until peaks form; fold into yolk mixture.
Drop batter by 1/4 cup onto a hot, lightly greased griddle. Cook until golden brown, turning once. Serve with maple syrup.
