Mrs. Harrington's Chocolate Chip Coffeecake Recipe - Cooking Index
1 cup | 160g / 5.6oz | Brown sugar - (firmly packed) |
1 cup | 237ml | Oil |
1 cup | 237ml | Brewed black coffee |
3 cups | 187g / 6.6oz | Flour |
1 teaspoon | 5ml | Salt |
1 teaspoon | 5ml | Baking soda |
1 teaspoon | 5ml | Vanilla extract |
2 | Eggs | |
1 teaspoon | 5ml | Cinnamon |
12 oz | 340g | Chocolate chips |
Preheat oven to 400 degrees.
In a large bowl combine sugar, oil, coffee, flour, salt, baking soda, vanilla, eggs and cinnamon; mix until smooth.
Pour into a 9- by 13- by 2-inch baking pan, or 3 (12 cup) muffin pans. Sprinkle chips on top evenly.
Bake muffins for about 15 to 20 minutes per pan at 400 degrees. The 9- by 13-inch baking pan will take about 20 to 25 minutes, also at 400 degrees. Check doneness my inserting a toothpick in an area with no chips; if it comes out clean, it is cooked.
This recipe yields 15 servings.
