Mango-Ginger Granola


Recipe Ingredients

4 cups 250g / 8.8ozOld-fashioned oats
1 cup 160g / 5.6ozBrown sugar - (packed)
2/3 cup 61g / 2.2ozSlivered almonds
1/2 cup 118mlWheat germ
1/2 teaspoon 2.5mlGround cinnamon
1/4 teaspoon 1.3mlGround ginger
1/2 cup 118mlMango Kerns From Libby's refrigerated all
  Nectar
3 tablespoons 45mlButter or margarine - melted
2 teaspoons 10mlVanilla extract
1   Dried mango - (6 oz) - finely chopped

Recipe Instructions

Preheat oven to 350 degrees. Lightly grease 15- by 10-inch jelly-roll pan.

Combine oats, sugar, nuts, wheat germ, cinnamon and ginger in large bowl. Stir in nectar, butter and vanilla extract; toss well to coat. Spread mixture evenly into prepared pan.

Bake, stirring frequently, for 30 to 40 minutes or until golden brown and crisp. Cool completely in pan on wire rack. Stir in mango.

This recipe yields 7 cups.
