Crisp Corn Bread Waffles

Recipe Ingredients

10   Strips bacon
1/3 cup 78mlOil
2 cups 125g / 4.4ozCornmeal
1 cup 62g / 2.2ozFlour
1 teaspoon 5mlBaking powder
1/2 teaspoon 2.5mlBaking soda
1/2 teaspoon 2.5mlSalt
2 teaspoons 10mlSugar
1 1/2 cups 355mlMilk
2 tablespoons 30mlVinegar
2   Eggs
8 oz 227gMaple syrup
1/4 cup 49g / 1.7ozButter

Recipe Instructions

In a skillet fry strips of bacon until crisp. Remove and drain; reserving the drippings. Add oil.

In a bowl, combine cornmeal, flour, baking powder, baking soda, salt, and sugar.

In another bowl, combine milk and vinegar; set aside for 10 minutes.

Beat eggs in a mixer bowl. Add the reserved bacon fat and milk mixture. Add the cornmeal mixture and crumbled bacon. Mix well.

Bake in a waffle iron according to the manufactuter's directions. Serve with maple syrup and butter.

This recipe yields 5 servings.
