2 teaspoons | 10ml | Lemon juice |
1/2 cup | 118ml | Red wine |
3 | Eggs | |
2 cups | 125g / 4.4oz | Flour |
1 cup | 93g / 3.3oz | Coconut |
8 oz | 227g | Candied red cherries |
8 oz | 227g | Pecans - chopped |
8 oz | 227g | Green pineapple chunks |
8 oz | 227g | Dried mixed fruit |
8 oz | 227g | Golden raisins |
Preheat oven to 350 degrees. Grease a 10- by 4-inch tube pan or 2 loaf pans, 9 by 5 by 3 inches.
In a bowl, combine softened butter, sugar, baking powder, nutmeg, lemon juice, red wine, and 3 eggs. Stir in flour. Add coconut, candied red cherries, chopped pecans, green pineapple chunks, dried mixed fruit, and golden raisins.
Pour into prepared pans. Bake at 350 degrees for 1 hour.
