Spicy Fruit Muffins Recipe - Cooking Index
2 cups | 125g / 4.4oz | Flour |
3 teaspoons | 15ml | Baking powder |
1 teaspoon | 5ml | Salt |
1/8 teaspoon | 0.6ml | Ground cloves |
1/4 teaspoon | 1.3ml | Nutmeg |
1 cup | 237ml | Shredded pared apple |
2/3 cup | 218g / 7.7oz | Brown sugar or maple syrup |
1/2 cup | 73g / 2.6oz | Chopped walnuts |
2 | Eggs - beaten | |
2/3 cup | 157ml | Apple juice |
1/4 cup | 49g / 1.7oz | Butter - melted |
1 cup | 237ml | Bran flakes |
Sift together flour, baking powder, salt and spices. Stir in apple, brown sugar and nuts.
In a separate bowl, combine eggs, juice and butter. Stir into apple mixture just until blended.
Fold in bran flakes. Pour into oiled muffin pans, filling each cup about 2/3 full. Bake at 400 degrees for 15 to 20 minutes.
This recipe yields 12 rolls.
