Irish Tea Bread Recipe - Cooking Index
2 lbs | 908g / 32oz | Raisins |
1 lb | 454g / 16oz | Dark brown sugar |
2 1/2 cups | 592ml | Cold tea |
4 cups | 250g / 8.8oz | Self-rising flour |
2 | Eggs - beaten | |
1/2 teaspoon | 2.5ml | Nutmeg |
1/2 teaspoon | 2.5ml | Cinnamon |
In a large mixing bowl, combine raisins, sugar and tea and allow to sit for 8 hours or overnight.
Stir in 2 eggs, spices and flour. Mixture will be very moist.
Bake in two greased loaf pans at 325 degrees for 1 1/2 hours or until done. Freezes well.
This recipe yields 2 loaves.
