Irish Tea Bread

2 lbs 908g / 32ozRaisins
1 lb 454g / 16ozDark brown sugar
2 1/2 cups 592mlCold tea
4 cups 250g / 8.8ozSelf-rising flour
2   Eggs - beaten
1/2 teaspoon 2.5mlNutmeg
1/2 teaspoon 2.5mlCinnamon

Recipe Instructions

In a large mixing bowl, combine raisins, sugar and tea and allow to sit for 8 hours or overnight.

Stir in 2 eggs, spices and flour. Mixture will be very moist.

Bake in two greased loaf pans at 325 degrees for 1 1/2 hours or until done. Freezes well.

This recipe yields 2 loaves.
