1 cup | 198g / 7oz | Margarine - (2 sticks) |
1/4 cup | 49g / 1.7oz | Sugar |
1/4 cup | 40g / 1.4oz | Brown sugar |
1 | Egg | |
1 teaspoon | 5ml | Vanilla |
3/4 cup | 46g / 1.6oz | All-purpose flour |
1 cup | 62g / 2.2oz | Whole-wheat flour |
1/4 cup | 59ml | Wheat germ |
2 teaspoons | 10ml | Baking powder |
1/2 teaspoon | 2.5ml | Salt |
2 teaspoons | 10ml | Cinnamon |
1 cup | 146g / 5.1oz | Walnuts - chopped |
1 cup | 160g / 5.6oz | Raisins |
In a medium bowl, cream shortening, sugars and egg together. Add carrots and vanilla.
Stir together flours, wheat germ, baking powder, salt and cinnamon. Add to creamed mixture. Stir in nuts and raisins.
Drop by tablespoons onto a lightly greased cookie sheet. Bake at 350 degrees for 14 to 16 minutes.
This recipe yields 30 cookies.
