Blueberry White Chip Muffins

Breakfast or dessert? These blueberry muffins with white chocolate chips are the perfect treat anytime.

Recipe Ingredients

2 cups 125g / 4.4ozAll-purpose flour
1/2 cup 99g / 3.5ozGranulated sugar
1/4 cup 40g / 1.4ozBrown sugar - (packed)
2 1/2 teaspoons 12mlBaking powder
1/2 teaspoon 2.5mlSalt
3/4 cup 177mlMilk
1 cup 198g / 7ozEgg - lightly beaten (large)
1/4 cup 49g / 1.7ozButter or margarine - melted
  = (we recommend Land O Lakes butter)
1/2 teaspoon 2.5mlGrated lemon peel
2 cups 474mlNestle premier white morsels - (12 oz) - divided
1 1/2 cups 355mlFresh or frozen blueberries
  Streusel Topping
1/3 cup 65g / 2.3ozGranulated sugar
1/4 cup 15g / 0.5ozAll-purpose flour
1/4 teaspoon 1.3mlGround cinnamon
3 tablespoons 45mlButter or margarine

Recipe Instructions

Preheat oven to 375 degrees. Paper line 18 muffin cups.

Combine flour, granulated sugar, brown sugar, baking powder and salt in large bowl. Stir in milk, egg, butter and lemon peel. Stir in 1 1/2 cups morsels and blueberries. Spoon into prepared muffin cups, filling almost full. Sprinkle with Streusel Topping.

Bake for 22 to 25 minutes or until wooden pick inserted in center comes out clean. Cool in pans for 5 minutes; remove to wire racks to cool slightly.

Place remaining morsels in small, heavy-duty plastic bag. Microwave on Medium-High (70%) power for 30 seconds; knead. Microwave at additional 10 to 20 second intervals, kneading until smooth. Cut tiny corner from bag; squeeze to drizzle over muffins. Serve warm.

Streusel Topping: Combine sugar, flour and cinnamon in small bowl. Cut in butter or margarine with pastry blender or two knives until mixture resembles coarse crumbs.

This recipe yields 18 muffins.
