Warp tortillas in foil and heat in a 300 oven for 10-15 minutes. Or wrap in plastic wrap and heat in a microwave oven. Cook sausage or ground beef with onion. Drain on paper towels. Place in a bowl and keep warm. Beat eggs, sour cream and green onions. Add butter to a frying pan and cook eggs, stirring. Add cheeses.
Arrange chilies, olives, green onions, salsa, refried beans, cheeses, sour cream and tomato in small bowls. To make each fajita, fill a warm tortilla with your choice of filling, eat with a knife and fork or fold into a pocket and eat.
