Scrambled Eggs Fajitas

Recipe Ingredients

8   Tortillas - (7" dia)
1 lb 454g / 16ozBulk pork sausage
  = (or ground beef and chorizo)
1   Onion - chopped (medium)
  Butter or Margarine - as needed
6   Eggs
4   Green onions - sliced
1/3 cup 48g / 1.7ozShredded cheddar or jack cheese
1/3 cup 78mlSour cream
1   Green chilies - (4 oz) - cut up
1   Black olives - (7 oz) - sliced
  Green onions - chopped
  Salsa
  Refried beans
  Shredded jack cheese
  Shredded cheddar cheese
1 cup 237mlSour cream
  Chopped tomato

Recipe Instructions

Warp tortillas in foil and heat in a 300 oven for 10-15 minutes. Or wrap in plastic wrap and heat in a microwave oven. Cook sausage or ground beef with onion. Drain on paper towels. Place in a bowl and keep warm. Beat eggs, sour cream and green onions. Add butter to a frying pan and cook eggs, stirring. Add cheeses.

Arrange chilies, olives, green onions, salsa, refried beans, cheeses, sour cream and tomato in small bowls. To make each fajita, fill a warm tortilla with your choice of filling, eat with a knife and fork or fold into a pocket and eat.
