Potato Pancakes Recipe - Cooking Index
| 2 1/2 cups | 592ml | Coarsely-shredded raw potato |
| 1 cup | 62g / 2.2oz | Onion - grated (small) |
| 1 teaspoon | 5ml | Salt |
| 1/3 cup | 20g / 0.7oz | Flour - (to 1/2) |
| 1 | Freshly-ground black pepper | |
| 1 | Egg - (to 2) | |
| 2 tablespoons | 30ml | Salad oil |
| Applesauce - for serving |
Thirty minutes before serving, mix potatoes, onion, salt, flour, pepper and egg in a medium bowl. Preheat a skillet over medium-high heat until a drop of water bounces on the surface. Place 2 tablespoons oil in the skillet.
Make pancake shapes from potato mixture. Fry, turning once, until both sides are crisp and golden, about 5 minutes on each side. Drain thoroughly on paper towels. Place on a warm platter and serve with hot or cold applesauce.
