Granola Muffins Recipe - Cooking Index

In a large mixing bowl, stir together flour, wheat germ, cloves, cinnamon, sugar and soda.
In another bowl, beat eggs; add oil and buttermilk and combine.
Make a well in the center of the flour mixture. Pour egg mixture into center and stir just until slightly combined. Be careful not to overmix. Fold in granola with a few quick strokes.
Fill lightly greased or paper lined muffin tins 2/3 full. Bake at 400 degrees for 15 to 20 minutes.
This recipe yields 24 muffins.
Variations:
u Add 1 1/2 cups grated apple with granola.
u Add 1/2 to 1 cup chopped dried apricots that have been soaked in 1/4 cup hot water for at least 1 hour.
u Add 1 1/2 cups cranberries coarsely chopped and mixed with 1/4 cup sugar.
u Fill muffin cups half full of batter. Spoon 1 teaspoon jam onto batter and cover with more batter until 2/3 full.
u Add 1 1/2 cups raisins that have been covered with boiling water and then soaked for at least 1 hour and 1/2 to 1 cup chopped nuts.
u Add 2 teaspoons grated orange peel to flour. Stir 1 teaspoon orange marmalade into batter in each muffin cup. Add a streusel topping before baking.
u Use powdered buttermilk and substitute liquor for the water (ie, use a cranberry liqueur for a cranberry granola muffin).
