Granola Baked Apple Recipe - Cooking Index
4 tablespoons | 60ml | Cooking apples (large) |
1 cup | 237ml | Granola |
1 teaspoon | 5ml | Cinnamon |
1/4 teaspoon | 1.3ml | Nutmeg |
2 tablespoons | 30ml | Raisins |
= (or chopped dried fruit) | ||
1/2 cup | 118ml | Sour cream or yogurt |
Brown sugar - as needed | ||
Nuts - as needed |
Cut off the top 1 inch of each apple. Set aside. Using a spoon, scoop out pulp from apple, leaving 1/2-inch shell. Reserve pulp.
Mix granola, cinnamon, nutmeg, raisins and chopped apple pulp. Fill apples with granola mixture. Place apples in a shallow baking pan and fill with 1 inch of water.
Bake in a 400 degree oven for 25 to 30 minutes. Serve warm topped with sour cream or yogurt and sprinkled with brown sugar and nuts.
This recipe yields 4 servings.
Variation: Add 1/2 teaspoon peanut butter to granola before filling apples
Tip: Cut scallops or points in top of the apple for a decorative touch.
