Fried Potatoes

Recipe Ingredients

4   Red potatoes - cooked with skins,
  And sliced 1/4" thick
1   Onion - sliced (medium)
2 tablespoons 30mlVegetable oil
1 tablespoon 15mlButter
2 cups 292g / 10ozShredded Cheddar cheese

Recipe Instructions

In a medium oven-proof frying pan, saute onions in oil until limp and transparent. Add sliced cooked potatoes. Saute in oil and butter, turning until golden brown.

Sprinkle with cheese. Cover and cook over low heat just until cheese melts. Or if using an oven-proof frying pan, melt cheese under broiler.

This recipe yields 2 servings.
